This is actually the very first reason you need a wine guide. In these manuals – which should be kept up to date each year – you’ll find all the information you need about a wine. What you ought to know so that you can pick the right wine is what grapes they were produced from, where the vineyard is, how long the wine has grew up, what kind of vats were used in order to develop the wine as well as exactly what the professional viewpoint on the particular year of wine is.
This will inform you what the quality of the wine is. After that, you need to learn how to consume the wine. Is it a dessert wine or will it go far better with beef? Is it a wine that you should consume along with fish or perhaps with chicken? What is the overall flavor of the wine? These are all essential questions.

Perfect Temperature For Wines
Wines need temperatures from 55 degrees to 58 degrees Fahrenheit (13 to 15 degrees Celsius). But temperatures between 40 to 65 degrees Fahrenheit or 5 to 18 degrees Celsius may be enough as long as it’s steady.
The degree and speed of temperature are crucial. Slow variations in temperature in winter and summer is not an issue. Unvarying changes in temperature will cause wines to age in haste.
The most essential step to follow in keeping wines is to avoid temperature oscillation. A sticky build up will form when this rule isn’t followed. Eventually this may lead to the crumpling of the cork. It is the same as having the cork placed in and out every single day. Small quantities of wine are then pushed to the end of the cork that makes way for air to leak in. The expected taste of wine will be at risk when air goes with the wine.
The appropriate maturity of wines is achieved at 55 to 58F. Higher temperatures cause wine to age quickly and cooler temperatures make the ageing process slow. Irreparable damage will result to a wine that’s stored above 82F in as little as a month.
Keeping wines in places with temperatures of 55F won’t give you any trouble as it improves the texture of the wine.
Every time you buy a wine you should store it right away in your cellar. The wine can make use of a little relaxation from the strain of traveling after you purchased it even when you will be using it in a while.
You newly-bought wine should undergo the best VIP treatment before you store it in your cellar.
Any wine devotee is aware that storing wines in bad conditions can damage its authenticity but how many of us are aware there are stages that need perfect handling of wines? Someone purchases a wine but forgets it in his car one warm afternoon. You are about to keep it in your wine room but it has already been heated up in the car earlier. Never forget that extremely temperatures will result to damaging chemical reactions to the wine.

Alsatian Wine
Ever tasted an Alsace Premier Cru wine? You have never heard of such a thing? There is a good excuse for that… It doesn’t exist.
Alsace’s Grand Cru vineyard system has been widely criticized for many reasons, but there’re two main reasons. The first main reason is that the Grand Cru rankings promote varietal wines made from four outstanding Alsatian grape varieties (Gewurztraminer, Riesling, Pinot Gris and Muscat), and exclude other varieties and blends, even if they’re created utilising the previously mentioned four varieties. The second main reason is that the system includes not only the great vineyards of the region, but also a lot of vineyards that are potentially not capable of manufacturing Grand Cru level wines.
Why doesn’t Alsace have a Premier Cru classification? The answer may lie in the most recent history of the region. By recent, I mean the last four hundred years or so.
At quick glance, you will come to understand that the region is at the epicentre of Europe at the border of Germany and France. You will also learn (if you did not know already) that war has torn up the region. The last four hundred years of war in Alsace have turned the wine industry up, down, left, and right. It has struggled to survive, held on for dear life, and is now on the up and up, seemingly recapturing its former strength and vigor.
About 30 years or so after WWII, Alsatian producers agreed that, in an effort to raise the standard of production of Alsatian wine, an official classification system should be established and applied. It took a little time to apply it, and there was an abundance of debating. With the 1983 vintage, the Grand Cru classification system was in force, but the debate has continued.
The main criticism of the classification system has to do with real-estate and so levels of classification. Many Grand Cru vineyards merit the designation, while many others may merit special identification, though not always the “Grand Cru” moniker. Sadly, there is no “Premier Cru” classification or “Village” classification, as in Burgundy.
That may be a nice thing for the North American market, where simplicity is just about invariably a good thing. American’s desire to know, “What’s the grape and what country does it come from?” So, another revision of the system and addition of a Premier Cru level may complicate things for the American consumer.
Still, it may be a good thing for the American consumer regarding quality… And it could be good for Alsace as well.

The Best Value Wines
Today, more than ever, there is a focus on “value wines.” Folks need to get the most for their cash while still imbibing new classy wines. One of the regions where “value wine” can be discovered is in France’s Wild Southwest. This region used to be known just for producing bulk wine. But, I've discovered a spot where I suspect you’ll be able to find quality at a reasonable cost: Domaine La Croix Belle in the Languedoc.
Allow me to introduce you to a few of my favorites…
Saint-Chinian ’04 – A classic Languedoc red wine. Lavish and saturated, this wine has a hint of delicacy and loads of plum, berry, and dark cherry flavours. Medium-weight tannins occupy the savory finish. This wine has a true richness to it and is excellent for any winter dinner.
Coteaux de Languedoc ’04 – A mix of Syrah, Mourvedre, Grenache, and Cinsault. This wine is luscious, rich, and full-bodied, with layers of dark plum, chocolate, cassis, and brandied cherry flavours. It has a muscled structure, with lots of smoke and bitter-sweet chocolate on the finish. Perfect with roast beef, lamb, or game. It was awarded 90 points by the Wine Spectator.
Champ du Lys Blanc ’07 – This wine is a mix of white Grenache finished off with Viognier. The Grenache gives the wine a solid mouth feel and the Viogner offers delicate aromatics. Overall, this wine is a tasty, medium-bodied white, brightly seasoned with peach and lightly herbaceous. This wine was recognized as one of the top 100 Vin de Pays in Britain for 2009.
No. 7 Blanc ’04 – Possibly the fullest white wine you’ll ever enjoy. It is ideal for enjoying near the fireplace with fondue and pate. It is a mix of seven white grapes (Viognier, Chardonnay, Grenache Blanc, Sauvignon, Carignan, Muscat, and Chasan). The Wine Spectator awarded it 90 points.
“Value wines,” by nature, are difficult to identify. In fact, if everybody recognised them as valuable, their cost would increase and they might no longer be “value wines.” Value wines must fly under the radar to some extent. Therefore, I encourage you to test out wines from Southwest France in general, and Domaine La Croix Belle in particular, before everyone else becomes mindful of their value.

Wine-Making in the Dutch Cape Colony
Almost all of you know me as a defender of Old World wine, yet you don’t know that I am very keen on the wines of South Africa. I have always relished them because I think that they consistently offer a fascinating blend of new world grapes with just enough old world earthiness, intricacy, and structure (think acidity, tannin, etc.). I do, nonetheless, struggle to put South African wines in the “New World” wine category.
Why? Well, it was in 1659 the first grapes were cropped in the Dutch Cape Colony (present day Southwest SA). Twenty-six years on, in 1685, Simor van der Stel established the Constantia vineyards in the Dutch Cape Colony, and Louis XIV revoked the Edict of Nantes. It was only 3 years later, in 1688, that about 200 or so French Huguenots settled in the Olifantshoek Valley (named after the elephants that once ranged there). Today it is known as the Franschhoek Valley (“French Corner” in Afrikaans), baring witness to the French settlement.
Viticulture was present in SA before those French emigrants moved in, and there were lots of additional reasons that have led to South Africa’s achievements in the wine world. However, the reality of the situation is that without French know-how, the young “wine industry” (if I can even call it that) of the Dutch Cape Colony wouldn’t have matured. Wine production would have in all likelihood stayed isolated to Constantia (a good source of terrific cool climate white wines & scrumptiously sweet dessert wines), and had it spread it likely would have simply remained a novelty.
The French laid the footing for the celebrity and quality of today’s South African wines. Naturally, plenty of vineyards in the Cape still have French names. This serves as evidence of the contribution the French made to South Africa’s now famous wine-making industry.
Thank the Lord for the French! Dieu merci, pour les Francais! For, without them, would we enjoy South African wine?
